Glucomannan is a polysaccharide consisting of a backbone of β-1,4-linked D-mannose and D-glucose, with a small amount of branches containing acetyl group and hydroxyl functional groups. It is mainly extracted from the tuber or root of konjac plants, and also functions as components of the cell walls of bacterial, plant and yeast.
