Gentiobiose (6-O-β-d-glucopyranosyl-d-glucose) is a disaccharide composed of two units of D-glucose joined with a β(1->6) linkage. It can be obtained through enzymatic hydrolysis of glucans, e.g., starch hydrolysis.
