Exopolysaccharides (EPS) produced by fungi and bacteria, especially lactic acid bacteria (LAB), composed of monosaccharides and non-carbohydrate substituents such as pyruvate, acetate and phosphate. They can provide surface adherence of cells, protect cells from environmental conditions, and assist in biofilm formation.
