Galactomannans are polysaccharides composed of β-(1–4)-D-mannan backbone with α-(1–6)-D-galactose branches, mainly present in the endosperm of numerous plants, also found in microbial sources. The ratios of mannose/galactose in galactomannans vary with plant origin, including fenugreek gum(~1:1), guar gum(~2:1), tara gum(~3:1), locust bean gum/carob gum(~4:1) and cassia gum (~5:1).
