The gelling agent in agar is agarose. It is a polymer found in red algae/seaweeds. It has a disaccharide repeating units (d-galactose beta-1,4-linked to 3,6-anhydro-L-galactose / AHG). Between repeating units, it's alpha-1,3-linked.
